Ingredients

12-15 small potatoes

2 Tablespoons unsalted butter, melted

1 Tablespoon olive oil

Salt and pepper for seasoning

Fresh parsley, chopped for garnish
Directions
Preheat oven to 400 F degrees.
Bring a pot of water to boil. Add potatoes and simmer for 20 minutes or until a fork pierced goes in easily.
Drain potatoes and then place on a baking sheet lined with parchment paper. Using the bottom of a glass, smash the potato to your desired thickness. The thinner the crispier.
Season potatoes with salt and pepper. Drizzle each potato with melted butter. Sprinkle olive oil over the top.
Bake potatoes in 400 degree oven for 40-45 minutes until crispy. Do not flip potatoes.
Remove from oven and sprinkle with chopped parsley.
