As a dish, a timbale is a "deep dish" filling completely enclosed in a crust. The crust can be sheet pastry, slices of bread, rice, even slices of vegetable.
You won’t believe how good these are if you make them from scratch. They are moist and delicious. Assemble in pita bread with tahini sauce, tomatoes, cucumbers, arugula and tzatziki.
Make this and serve over rice. Add corn salsa, guacamole, salsa, shredded Monterey Jack cheese and shredded lettuce and a dollop of sour cream. This is one of my favorite vegetarian dishes.
