Ingredients

12 oz mixed crispy lettuce

4 oz micro greens
-
6-8 figs, quartered

3 T. Olive oil
-
Zest of lemon
-
Juice from ½ lemon
-
2 teaspoons of sweet balsamic (fig, blackberry) or aged balsamic OR red wine vinegar

1 pinch of sea salt

6 grinds of freshly ground pepper
Dressing
Directions
In a large serving bowl, add the lettuce interspersing the micro greens. Fans out the quartered fig pieces over the green.
In a small bowl, whisk together all the dressing ingredients to form an emulsion. When ready to serve, pour the dressing over the salad and enjoy!
