Ingredients

1 red beet, peeled and cut in half

½ cup water

1 cup rice flour

¼ cup semolina/rava, coarse

1 teaspoon salt

3 cups water

½ onion, finely diced

1 teaspoon ginger, grated

1 green chili, finely chopped
-
1 sprig curry leaves, chopped

2 Tablespoons fresh cilantro, chopped

1 teaspoon cumin seeds
Directions
Peel red beet and cut in half. Add to a blender with ½ cup water and blend to a smooth paste. Transfer to a large bowl.
Add rice flour, rava, salt and water. Whisk until smooth.
Now add the onion, ginger, chili, curry leaves, cilantro and cumin seeds. Mix well, cover and rest for 10 minutes.
Add pan to stove and heat until water, when splattered, dances across the hot pan. Scoop a small portion of the mixed batter onto the hot pan and spread 1 tsp. Oil around the edges. Allow to cook for about 2-5 minutes or until the edges brown and it pulls away from the pan.
Enjoy dosa with fresh chutney

Green chutney
1 cup fresh mint leaves (with stems)
1 cup fresh cilantro (with tender stems)
3 garlic cloves
1 inch piece of ginger
1 green chili
2 T. Roasted gram dal
1/2 teaspoon cumin powder
1/2 teaspoon salt
1/2 lemon squeezed
1/4 cup water
Add all the ingredients into a blender and grind until you have a smooth paste. Slowly add additional water if needed to make the paste.
