There are many versions of shoofly pie. They are all very similar, but this is one is true to my childhood. It reminds me of the shoofly that my mom would bring home from the Reading Fairgrounds. The true Amish style shoofly pie. This pie uses table syrup (Schlorer’s Turkey Golden Table Syrup) and molasses, not just plain molasses, which is not the true flavor that the Amish use.

This can be called a wet bottom pie because the liquid leaves you with a gooey layer on the bottom and a cake like layer on top. Enjoy!

Ingredients

1 prepared pie crust

¼ cup molasses

¾ cup table syrup

1/8 cup brown sugar

¾ cup hot water

¾ teaspoon baking soda

1 egg, beaten

¼ cup butter or shortening

1 cup brown sugar

¼ teaspoon cinnamon

¼ teaspoon baking soda

1 ½ cups flour
For the liquid

Directions
Preheat oven to 375 degrees.
For the liquid
In a glass bowl add the molasses table syrup and brown sugar. Dissolve the baking soda into the hot water and add the water to the syrup. When cooled, add the beaten egg and stir. Set aside.
For the crumbs
In a bowl, mix the butter and brown sugar until crumbly. Add the cinnamon and baking soda. Stir in the flour until you have a dry, crumbly mixture
Put the pie together
Using a homemade pie crust or store bought. Roll out the dough and add to your pie dish.
To your liquid, add 2 handfuls of the crumbs and stir to combine. Pour the liquid into the pie crust. Sprinkle the rest of the crumbs over the top of the liquid. Start on the outside edges so the crumbs soak up the liquid that will try to boil over. Make sure the crumbs cover all the liquid.
Bake at 375 degrees for 20 minutes. Lower you oven to 350 degrees and bake the pie for an additional 25- 30 minutes. Pie should be jiggly but not runny when you move the pie dish. Remove pie from oven and let rest until cool. When you cut into the pie it will have a gooey bottom layer and a cake layer.
Serve pie with coffee for breakfast or non-traditional with a scoop of vanilla ice cream.

Option for shortbread pie crust:
1 1/2 cups all purpose flour
1/4 cup light brown sugar
1/2 teaspoon salt
11 Tablespoons unsalted butter, melted
In a medium bowl, combine flour, brown sugar and salt and mix. Slowly pour in melted butter and stir with a fork until combined. Press the soft mixture into the bottom and sides of a 9” pie plate with your fingers. Set the pie in the freezer 15 minutes while you put your shoofly pie ingredients together.
