Simple Chicken Piccata

Ingredients

4 thin cut chicken breasts

Salt and pepper for seasoning

Garlic powder for seasoning

1 cup flour for coating chicken

2 Tablespoons butter

2 Tablespoons olive oil

2 Tablespoons butter

½ cup chicken broth or dry white wine

1 Tablespoon lemon juice and zest from one lemon

1 Tablespoon capers
-
¼ cup whipping cream

Grated Parmesan for topping

Chopped parsley for garnish
Sauce
Directions
Season chicken breasts with salt, pepper and garlic powder.
Dredge seasoned chicken breast in flour and set aside.
In a pan over medium heat, add olive oil and butter, until melted.
Add chicken breasts to the heated pan and cook for 3 minutes per side until browned.
Once chicken is browned, remove to a plate. Chicken does not have to be fully cooked as it will continue to cook in the sauce. Turn off the heat.
Sauce
Using the same pan that you cooked the chicken in, add 2 tablespoons of butter, chicken broth, lemon juice, zest of lemon, and capers. Stir to remove bits on the bottom of the pan. Add the cream to the pan and stir gently. (If you don’t want to use cream, increase the chicken broth to ¾ cups)
To finish the dish, turn the burner back on low heat and add the cooked chicken back into the pan. Spoon the sauce over the top of the chicken and bring the sauce to a simmer. Allow the chicken to simmer in the sauce for about 5 minutes.
Before serving, sprinkle the chicken with the grated Parmesan and chopped parsley.
Serve the chicken with the sauce drizzled over each piece.
