Spinach and Cheese Casserole

This vegetarian recipe contains eggs. The cottage cheese makes this casserole so fluffy. If you haven't baked with cottage cheese, you should try this one.

Ingredients

2-10 oz packages of frozen spinach, thawed and drained

1 onion, chopped

4 garlic cloves, minced

1/2 cup unsalted butter, melted

6 eggs, slightly beaten

16 oz. cottage cheese

2 T. all-purpose flour

16 oz. sharp cheddar cheese, grated

salt and pepper
Directions
Preheat oven to 350 degrees. Lightly grease a large casserole dish.
Drain thawed spinach. In a small skillet, melt 2 T. butter. Sauté onion and garlic until soft. Remove from pan to cool.
Mix drained spinach with lightly beaten eggs, cottage cheese, cheddar cheese, flour and the remaining 6 T. butter.
Add sautéed onion and garlic and mix together. Season lightly with salt and pepper.
Pour into your prepared casserole dish and bake for 1 hour or until the center is firm.
