Cauliflower Fried Rice

Ingredients

1 small head cauliflower, grated

1/2 cup cooked rice

5 T. Butter
-
Couple drops of sesame oil

1/2 onion, chopped

1 cup carrots, chopped or sliced thin

2/3 cup green onions, chopped (scallions)

2 garlic cloves, minced
-
3 T. Sesame seeds, toasted

5 eggs, scrambled
-
1/2 cup frozen peas
-
5 T. Soy sauce, more if needed

1/4 teaspoon salt

1/4 teaspoon pepper
Directions
Cook rice according to package directions.
Finely grate a head of cauliflower or use a food processor until you have rice size pieces.
In a large skillet, melt butter and add sesame oil.
To the hot oil, add onions, carrots, green onions and garlic.
Saute until carrots are translucent. Set aside
Lightly grease another skillet and add beaten eggs. Scramble eggs lightly. Do not brown.
To the vegetables on medium high heat, add rice, eggs, sesame seeds and peas. Stir in soy sauce. Add salt and pepper.
Serve with a drizzle of chili oil and a dollop of chili paste. Enjoy!

You can add any vegetables you like. I added mushrooms in the video but also always add tomatoes because I like the pop of tomato when I eat this.
You can find grated cauliflower in the grocery store so there is no excuse not to make this one.
