Ingredients

1/2 lb. Lean ground beef

1/2 lb. Chorizo sausage (beef or pork) removed from casing

1 egg, beaten

2 garlic cloves, minced

1/2 carrot, minced/grated

1/2 cup cooked rice

1/2 cup cilantro, chopped

1/2 teaspoon salt

1/2 teaspoon ground pepper

1 teaspoon cumin powder

6 cups chicken broth
-
1/2 onion, chopped

3 stalks celery, sliced into small pieces

1 - 28 oz can whole peeled tomatoes in sauce

1/2 teaspoon cumin powder

1 teaspoon oregano
-
1/2 cup cilantro

1 large zucchini, sliced

For the Meatballs
Prepare rice by adding 1/2 cup rice to 1 cup water and simmering for 10 minutes. Set aside to cool.
Combine all the meatball ingredients and roll into meatballs. This will yield 20 small meatballs.
Preparing Soup
Combine chicken broth, onion, celery and tomatoes with liquid, cumin, oregano and cilantro in a large pot.
Bring to a boil and then reduce heat and simmer for 10 minutes, breaking up the tomatoes while cooking.
Drop meatballs into the boiling soup so they cook quickly.
Simmer for 10 minutes. Add the sliced zucchini to the soup and simmer another 10 minutes. Season with salt and pepper to taste.
Serve soup with a scoop of cooked rice or by itself.
