Simple Baked Salmon

This is my favorite way to eat salmon if I’m not using the grill.

Ingredients

2 - 4 oz pieces of salmon (2 fingers wide portion)

Olive oil (use flavored olive oil if you like)

Salt and pepper

Lemon - sliced
Directions
Preaheat oven to 400 degrees.
On a baking sheet lined with parchment paper place the salmon skin side down. Drizzle with olive oil and sprinkle with course salt and ground pepper. Add a sliced lemon on top of each piece of salmon or cut your lemon in quarters and place on baking sheet to bake with the fish.
Don’t over bake the salmon. It should not need more than 15 minutes. When salmon is finished baking, squeeze the oven baked lemon over top.
Your salmon should have a nice crust with just the olive oil and s&p. Enjoy!
Recipe Note
Serve with a side salad and rice or your favorite grain.
Note: A simple mixture of brown sugar and Dijon mustard spread over the top makes a good addition to this baked salmon. Keep the paste to a minimum (1 tsp brown sugar and 1/2 tsp mustard)
