Seared Ahi Tuna and Arugula

Ingredients

¼ cup grapeseed or vegetable oil

1 ½ teaspoon ginger, grated

1 lime, juiced
-
1 T. Rice wine vinegar

1 T. Soy sauce
-
½ teaspoon kosher salt
-
¼ teaspoon ground pepper

2 T. Vegetable oil
-
½ lb Ahi Tuna
-
Salt as needed

1 T. White sesame seeds
-
1 T. Black sesame seeds
-
5 oz arugula
-
1 ripe avocado, cut into strips

1 tomato, sliced

Dressing
In a bowl add the oil, ginger, lime juice, vinegar, soy sauce, salt and pepper and whisk to combine. Set aside and whisk again before dressing the salad.
Seared Ahi Tuna
On a plate combine white and black sesame seeds and stir to combine.
Lightly season the tuna with salt and then press tuna into sesame seeds to coat both sides.
Heat a large, heavy pan over high heat and add the vegetable oil. Add the tuna to the pan and sear until you can see from the side that the tuna is cooked. Flip the tuna over and cook on the other side for about 30 seconds - 1 minute. Do not overcook.
Remove the tuna from the pan and place on a cutting board. Slice into ½ inch thick strips. The tuna should be mostly raw on the inside.
Salad
Toss the arugula with about 2 T. Of the dressing, adding more if needed. Place salad on a plate and top with seared tuna slices and avocado. Serve immediately.
