Crusted Seared Ahi Tuna Salad

Ingredients

5 T. Fresh lime juice (from 2 limes, juiced and zested )

2 teaspoons soy sauce

1 teaspoon Sriracha

3 garlic cloves, minced

3 T. Olive oil

2 cups arugula
-
1 large avocado, cut into small cubes

4 green onions, sliced finely
-
1 small jalapeño, seeded and chopped

1 cup black rice
-
2 cups water
-
2 pieces of fresh Ahi tuna
-
3 T. Olive oil
-
3 T. Trader Joe’s Japanese multi-purpose seasoning (or season with sprinkle of salt and pepper and even amounts of white and black sesame seeds)

Directions
Dressing
Mix all ingredients in a small bowl and set aside.
Salad
Mix arugula, avocado, green onion and jalapeño in a large bowl and toss gently. Set aside.
Black rice
Rinse rice and add to a pan along with the water. Bring to a boil and then simmer for approx. 35 minutes. Turn off stove and allow to steam for 10 more minutes.
Seared Ahi tuna
In a large non-stick pan, add 1 T. Olive oil. When oil starts to smoke add the tuna steaks to the pan. Allow to sear for 1 minute. Using tongs flip the tuna and sear for 2 minutes on the other side.
Remove steaks to a cutting board and cut into small cubes. Place cubes into a small bowl and pour dressing over.
Plating the salad
Using a salad plate, add one scoop of black rice. Top with arugula salad. Place tuna along with some of the dressing over the top of the salad to serve.
