This is one dish I make for company. If you can find Scottish Salmon you should buy it. It has just enough fat to make it buttery and tender. I find it the best salmon to cook.
Serve with a side salad.
Cedar Plank Salmon

Glaze or no glaze, you decide, but when buying cedar planks I find that Primal cedar planks hold up the best and infuse great cedar flavor. Buy them on their website or Amazon carries them too for the same price. If you don’t want the honey ginger glaze just use a little salt and pepper. Keep it simple for the best flavor.

1 green onion, chopped

1 T. Ginger, minced

½ cup soy sauce

½ cup orange juice

½ teaspoon sesame oil

¼ cup honey

1 teaspoon salt

4 salmon fillets with skin (between 3-4 oz each)

1 hour in advance, add your cedar planks to water and make sure to add a heavy object on top to keep planks submerged. I use a cookie sheet for this.
Mix all glaze ingredients into a bowl or ziploc bag.
Place salmon fillet, with skin on, in marinade bag and gently shake to make sure the marinade covers the salmon.
Refrigerate for 20-30 minutes. Preheat grill while salmon is marinating.
After soaking, add the soaked planks to the heated grill. Close the lid and preheat your plank for 3 minutes. Flip plank and remove the salmon from the marinade and place skin side down on the hot side of the plank.
Close the lid on the grill and cook for 15-20 minutes. Cooking times vary based on the thickness of the salmon. Leaving the lid closed captures the smoke and infuses the fish. Note: watch for flare ups. If using cheaper planks, they burn faster and make catch on fire.
Serve the salmon on the grilling plank to add the beautiful aroma to your dinner table. Garnish with lemon slices.
