Couscous Salad with Pomegranate Seeds and Pistachios

This dish is ready in just a few minutes. I love the tartness of the pomegranate seeds with the crunch from the pistachios and my garden has fresh mint year round. Treat yourself to this versatile dish.

Ingredients

2 cups water

1 T. Olive oil

½ teaspoon kosher salt

2 cups couscous
-
½ cup pomegranate seeds (or more to taste).

½ cup pistachios, roasted then roughly chopped

½ cup fresh mint, chopped
-
½ cup parsley, chopped
-
1 lemon, zested
-
¼ cup olive oil
-
4 T. Fresh lemon juice
-
½ teaspoon kosher salt

Pinch of black pepper

Salad
In a medium saucepan, bring 2 cups water, olive oil and salt to a boil. Remove from heat.
Add couscous to hot water. Stir to combine. Cover with a lid and let sit for 5 minutes. Couscous should have absorbed the water and is tender.
Use a fork to fluff the couscous. Move to a large bowl to cool.
Add the pomegranate seeds, pistachios, mint, parsley, lemon zest. Mix gently to combine.
Dressing
Add all the ingredients to a small bowl and whisk to combine. Drizzle over couscous and gently mix.
Taste for salt and serve.
