Ingredients

3 cups Romaine lettuce, chopped

1 cup red cabbage, chopped

4 slices of bacon, fully cooked until crispy, then chopped

1 cup cherry tomatoes, quartered

3 green onions, chopped

½ cup cooked chicken, diced

½ cup uncooked salad macaroni (Ditalini) (yields 1 cup cooked)

½ cup Gorgonzola or blue cheese (*optional)

⅓ cup olive oil
-
¼ cup white balsamic vinegar (or white wine vinegar)

3 cloves garlic, minced
-
1 teaspoon Dijon mustard

½ teaspoon dried oregano
-
¼ teaspoon salt
-
¼ teaspoon black pepper
Dressing
Directions
In a large bowl add all the chopped ingredients. Cook pasta according to directions and add. Sprinkle gorgonzola on top.
Whisk all dressing ingredients together. Pour over salad and combine.
Recipe Note
You can make this salad ahead of time and pour dressing over when ready to serve.
