Roasted Seasoned Cashews

Ingredients

16 oz. raw cashews
-
¼ cup ghee
-
½ teaspoon chili powder
-
½ teaspoon garam masala
-
½ teaspoon salt
-
¼ teaspoon turmeric powder
-
Pinch of ground pepper
-
1 T. Jaggery - optional
-
8 curry leaves - optional
Directions
Add ghee to a pan to melt. Add cashews (and optional curry leaves) and roast over medium heat. Stir often. Cashews brown quickly so keep an eye on them. Once browned, sprinkle with seasoning and stir to combine. If you are using jaggery to make these a little spicy and sweet, add the jaggery with the spices and mix.
Cool nuts completely before eating. They get soft from roasting but will get crunchy again once they cool.
