Ingredients

3 cups raw corn kernels (about 4 cobs or fresh corn)

1 cup red onion, finely chopped

1/2 cup cilantro, chopped finely

1 medium jalapeño, finely chopped (seeds removed if you don’t like heat)

1/4 cup lime juice, fresh squeezed

1 T. White wine vinegar
-
1/4 teaspoon chili powder
-
1/4 teaspoon ground cumin
-
1/2 teaspoon salt
-
Avocado, chopped (optional)
Directions
Add all the ingredients to a bowl and stir to combine. Set aside for flavors to marry.
