This is really the best bruschetta recipe

Ingredients

1 cup tomatoes, chopped small
-
¼ cup red onion, chopped finely
-
3 garlic cloves, minced
-
1 cup artichoke hearts (in water), chopped into small pieces

2 T. Olive oil
-
1 ½ T. Balsamic vinegar
-
½ teaspoon freshly ground pepper
-
Parmesan cheese, grated
-
1 loaf French bread baguette
Directions
For the bread
Slice baguette on a diagonal and brush with melted butter or olive oil. Place on a cookie sheet and bake @375 degrees for 8-10 minutes or until lightly browned.
Bruschetta
Add all the ingredients above to a small bowl and stir to combine.
Top each baguette toast with bruschetta and sprinkle with grated Parmesan or a small piece of soft cheese (feta, Boursin, Brie)
