Bacon Wrapped Dates with Manchego Cheese

The best part about these is the bacon. You can use any bacon BUT if you can find Texas Iberico bacon....you should. If you are lucky enough to live in Texas, you can find it at some specialty markets, for the rest of us, that's what ordering online is for.
These pigs are flown in from Spain and transform their diet – acorns, fresh grass, mesquite beans and prickly pear fruit – into heart-healthy fats much like extra virgin olive oil.
Ingredients

12 Medjool dates, pitted

6 slices of bacon (Texas Iberico)

Manchego cheese, sliced
Directions
Cut dates down the center (but don't cut in half) and put a small piece of Manchego cheese in the center. Cut bacon slices in half and wrap the bacon around each date. Put a toothpick through the bacon and dates to keep them together.
Bake in 375° oven for 15 minutes or until bacon is cooked the way you like it.
