Turkey zucchini spinach vodka sauce

Ingredients

2 T. Olive oil

1 onion, chopped

1 lb. Ground turkey meat

1 teaspoon onion powder

1 teaspoon garlic powder

1/8 teaspoon red chili flakes

Pinch of salt and pepper

2 small zucchini, cut into cubes

2 handfuls of baby spinach
-
1 - 24 oz jar vodka sauce

1 large tomato, chopped

¼ cup grated Parmesan cheese, plus more for topping.
Directions
In a large saucepan, heat olive oil. Add onion and cook about 8 minutes or until onion is translucent.
Add ground turkey and break it up cook until browned. Add onion powder, garlic powder, salt, pepper and chili flakes.
Add chopped zucchini and cook for 3-5 minutes depending on how soft you like the zucchini. Add two handfuls of spinach and cover with a lid until spinach is wilted.
Stir to combine the spinach, add ½ jar of vodka sauce (or the whole jar). Let mixture come to a simmer. Now add chopped tomatoes and grated Parmesan.
Stir and serve over hot pasta of your choice or use roasted spaghetti squash (like we used here).
