Turkey Ginger Meatballs

Ingredients

2 T. Ginger, finely grated (separated in meat and sauce)

3 garlic cloves, minced

1 teaspoon ground cumin

½ teaspoon ground coriander

Pinch of salt

1 pound ground turkey meat
-
½ cup panko bread crumbs
-
2 T. Cilantro, chopped finely
-
2 T. olive oil
-
3 cups chopped tomatoes
-
4 green onions, thinly sliced
-
1 lime, quartered
Directions
In a large bowl combine 1 T. ginger, garlic, cumin, coriander and salt. Add ground turkey, panko crumbs and finely chopped cilantro. Gently mix with your hands making sure you don’t overwork the mixture. Using a large cookie scoop, form 1¼ inch balls.
Heat a large skillet and add the oil until hot. Add the meatballs in a single layer. Cook, turning meatballs so that all sides get browned, approximately 5-7 minutes.
Push the meatballs to one side of the pan and add the remaining 1 T.of grated ginger and saute for 1 minute. Add chopped tomatoes, soy sauce and a pinch of salt with the ginger. When the tomatoes simmer, cover the pan and let the meatballs cook for another 8 minutes.
Uncover the pan and sprinkle in the scallions and squeeze the lime juice. Stir all together. Taste and add more salt and lime juice if needed. Serve with cilantro rice.
