Pepper Rice

Ingredients

2 T. canola oil

1 teaspoon mustard seeds

1 teaspoon Chana dal

1 teaspoon Urad dal

1 stem curry leaves

1/4 teaspoon asafetida (hing)

1 small shallot, choped finely

10-12 cashew nuts

2 cups cooked rice

1 T. freshly ground black pepper

Salt to taste
Directions
Heat oil in medium saucepan. Add mustard seeds, chana dal and urad dal and cook until slightly brown.
Add curry leaves and hing. Leaves will crackle. Once they crisp, add shallot and cashew nuts and fry until slightly brown.
Add cooked rice, pepper and salt. Stir to combine.
Heat for 2-3 minutes until rice is heated through. Serve hot.
