Ingredients

1 teaspoon oil

1 slit green chili
-
2 garlic cloves
-
¼ inch piece of ginger, chopped

1 ½ teaspoon urad or chana dal

½ cup raw peanuts (w/o skin) or use already roasted peanuts

½ teaspoon cumin seeds

½ teaspoon salt
-
½ to ¾ cup water
-
1 teaspoon oil
-
¼ teaspoon mustard seeds

1 red chili, broken
-
Pinch of asafoetida
-
1 garlic clove, minced
-
1 sprig curry leaves
Tadka
Directions
In a medium pan, heat oil and fry chili, garlic, ginger and dal until dal turns golden. Once golden, remove to a plate and set aside.
To the same pan, add peanuts and roast until golden. Add cumin seeds to roasted peanuts.
Transfer the peanuts and fried garlic mixture to a blender along with salt and ½ cup water. You can add more water if needed. Blend to a smooth peanut chutney. Taste and add more salt if needed.
Remove to a bowl. Garnish with tadka.
Tadka
Add oil to a small pan and heat. Add mustard seeds, red chili, garlic and curry leaves. Fry until leaves turn crisp. Add a pinch of asafoetida.
Serve with idli or dosa.
