Ingredients

1 teaspoon oil

¾ teaspoon mustard seeds

¾ teaspoon cumin seeds

½ teaspoon fennel seeds

10 curry leaves

2 medium onions, chopped

½ teaspoon salt

2 teaspoons ginger/garlic paste

2 tomatoes, diced
-
½ teaspoon turmeric powder
-
1 teaspoon Kashmiri chili powder

1 teaspoon coriander powder
-
½ teaspoon cumin powder
-
4 T. Tamarind juice
-
1 cup coconut milk
-
1 cup water
-
2 green chilis, slit in half

15 oz. Cod, Haddock or any firm white fish (about 4 fillets), cut into small squares

Heat oil in pan and add tempering ingredients. Cook until seeds start to pop.
Other ingredients
Add chopped onion and ½ teaspoon salt to the hot oil and fry until the onion is slightly browned, about 10 minutes.
Add ginger/garlic paste and fry for 2 minutes.
Add diced tomatoes and fry for 1 minute.
Add all the spices and tamarind juice. Cook on medium heat for 5 minutes or until the tomatoes are soft.
Slowly add the coconut milk and water and cook for 3 minutes until simmering. Now add green chilis.
Add the fish pieces, give a gentle stir. Cover and cook for 10 minutes. Season with salt if needed.
Turn off heat and allow to rest for 10 minutes.
Serve with rice.
