Lemon Rice

This is a good way to use up leftover rice.

Ingredients

3 cups cooked rice, cooled

2 T. Oil

1 teaspoon mustard seeds

2 teaspoons urad dal

2 teaspoon chana dal
-
4 garlic cloves, sliced
-
1 dry red chili or green chili, split
-
8-10 curry leaves
-
1/8 teaspoon asafoetida (hing)

1/2 teaspoon turmeric
-
1 medium onion, chopped (or sweet bell peppers)

4 T. Lemon juice and zest to decorate

2 teaspoons salt
-
Chopped cilantro, sprinkle on top
-
1 T. Roasted peanuts (opt)

In a pan over medium heat, add oil then add mustard seeds. Once they start to splutter, add urad dal and chana dal until lightly browned.
Add the garlic, chilis, curry leaves, hing and turmeric. Now add the onion and cook for about 3 minutes or until onion is just barely tender.
Turn off the heat and set aside.
In a bowl with the rice, sprinkle the lemon juice and salt and mix. Pour tadka over rice and mix.
Let rest for lemon flavor to incorporate. Eat at room temperature. Sprinkle with cilantro and roasted peanuts to serve.
