Ingredients

10 cups full fat milk

2 cups heavy cream

2/3 cups distilled white vinegar or use ¼ cup lemon juice

Directions
Heat milk in a large saucepan over medium high heat until simmering.
Turn off stove and add vinegar/lemon juice.. Stir for 1 minute until milk curdles. If it doesn’t curdle, turn heat on and bring to a boil until you see it separate.
Line a strainer with 2 layers of cheesecloth
Pour milk mixture into strainer. Let this sit for 1 hour to let allow the liquid to drain.
After 1 hour, squeeze out the excess water by twisting the cheesecloth and tying the four corners together. Paneer will be soft at this stage.
Weigh the cheesecloth down with a heavy pan. And allow to sit for 15 minutes to drain excess liquid.
Remove liquid from the dish and Once refrigerate for 4 hours with weighted pan. Paneer will become firm.
Remove the paneer from the refrigerator and carefully remove the cheesecloth.
The paneer is now ready to use. You can immediately use for your recipe or store the whole uncut block in the refrigerator for 1-2 weeks.
If grilling, heat ghee in a pan, slice the paneer into cubes and fry until brown on both sides. Use for your favorite Indian dish.
