Green Beans with coconut

Ingredients
-
2 large handfuls of fresh green beans, cleaned and chopped (approx. 2 cups of chopped beans)

½ yellow onion, chopped

2 teaspoons salt

1 green chili, chopped
-
¼ cup coconut, shredded -unsweetened

¼ cup cilantro, chopped
-
1 T. Oil
-
½ teaspoon mustard seeds
-
½ teaspoon urad dal
For frying
Directions
In a small saucepan, add the chopped beans and chopped onion. Cover with water. Add 2 teaspoons of salt. Bring to a boil until the green beans are tender. About 8 minutes. Drain but keep about ½ cup water from the pan.
Add the drained beans back to the small saucepan. Add the chopped green chili.
In a small pan, heat the oil and add the mustard seeds and urad dal. Cook until the seeds begin to pop. Pour this over your cooked green beans and stir.
Add the grated coconut and stir. If the beans are to dry, add a small amount of the saved water.
Sprinkle with cilantro and serve.
