The difference between compote and sauce is that compote is chunky and not a blended sauce. I blend slightly with a hand immersion blender but still leave it chunky.

Ingredients

1 pint strawberries, washed and sliced

⅓ cup granulated sugar

1 teaspoon vanilla

Optional - squeeze of lemon juice
Directions
Add sliced strawberries into a medium sauce pan. Add sugar and vanilla and stir to combine. On medium heat until bubbly. Cook until thickened slightly - about 15 minutes.
Remove about ⅓ of the cooked mixture into a bowl. Using your immersion blender. Mix until you have a smooth sauce. Add this back into the strawberries. Stir together and it’s ready to use, warm or cold.
Mixture will last a few days, covered in your refrigerator.
