You can use any nut you choose; walnuts, peanuts, almonds. You will need a digital thermometer or candy thermometer to make this recipe.

Ingredients

1 cup coarsely chopped pecans (or nut of your choice)

1 cup chocolate chips (milk or dark)

2 sticks unsalted butter

1 cup granulated sugar

½ teaspoon Kosher salt

1 teaspoon vanilla extract
Directions
Spray a small cookie sheet with cooking spray and line with parchment paper. The oil helps the parchment paper stay in place.
Add butter, sugar and salt to heavy bottomed sauce pan. Bring to a boil over medium low heat, stirring frequently.
Once the sugar is dissolved and your candy has reached 290 degrees or the hard crack stage on a candy thermometer and reaches a light amber color, remove from the heat and add vanilla extract. Stir gently to combine.
Carefully pour the candy mixture onto the lined cookie sheet and spread to even thickness. Sprinkle with chocolate chips and allow to set for 5 minutes until the chocolate has softened.
With an offset spatula spread the chocolate to coat the toffee. Once the chocolate is spread, sprinkle the chopped pecan on top.
Using a piece of plastic wrap, press the pecans gently into the melted chocolate. The plastic wrap will help to evenly press the nuts into the chocolate.
Place the candy in the refrigerator and allow to cool completely. Let it sit for 2 hours.
When ready, remove the parchment paper from the pan and break the toffee into small pieces. Store in an airtight container in a cool place. I like to store mine in the refrigerator so the toffee stays “dry” and the chocolate doesn’t melt.
Recipe Note
Notes: To keep your toffee (sugar/butter mixture) from separating when you are ready to pour it on your prepared sheet, keep stove on low/medium flame and do not stir too often. Let the mixture simmer until it starts to turn bubbly and brown around the - outside of your pan. Measure temperature to 290 degrees.
