Peach Cobbler

You can make this cobbler with 1/2 the batter but I like the cake batter poured over the peaches too in this recipe.

Ingredients

6 peaches, peeled cored and sliced

¾ cup granulated sugar

¼ teaspoon salt

1 stick of unsalted butter (melted in oven)

2 cups flour

2 cups granulated sugar

4 teaspoons baking powder

½ teaspoon salt

1 ½ cups whole milk

Pinch of cinnamon for sprinkling
Prepare peaches
Batter
Directions
Preheat oven to 350 degrees
Slice butter into pieces and add to a 9x13 inch baking dish. Place the pan in the oven while it preheats to allow butter to melt. Once butter is melted, remove from oven.
Prepare peaches
Add peaches, sugar and salt to a saucepan and stir to combine. Cook until sugar is dissolved and peaches are soft. Remove from heat and set aside.
*You can use canned peaches too and skip this step for cooking).
Batter
In a large mixing bowl mix together the flour, sugar, baking powder and salt. Stir in the milk and mix until batter is smooth.
Pour ½ the batter into the prepared 9x13 baking pan, over melted butter and smooth out layer.
Spoon the peaches and some of the juice over the batter. Spoon remaining batter over the peaches and sprinkle with cinnamon.
Bake at 350 degrees for about 35-40 minutes or until top is lightly browned.
Serve warm with a scoop of ice cream.

Recipe Note
To substitute with canned peaches, use 2 - 15 oz jars or 1 - 32 oz jar.
