This is a great single serving dessert that gets topped off with a scoop of vanilla ice cream. I think it looks better as a single serving rather than in a 9x13 pan.

Ingredients
-
1 box yellow cake mix (dry cake mix - do not prepare cake)
-
1 - 21 oz can blueberry pie filling
-
1 - 20 oz can crushed pineapple, drained
-
1 cup fresh blueberries
-
½ cup shredded coconut, sweetened
-
1 stick butter, sliced for topping (you will not use the whole stick but its easier to slice as a full stick)
Directions
Preheat oven to 350 degrees.
Spread the blueberry pie filling onto the bottom of each ramekin. Top with some crushed pineapple, sprinkle of coconut flakes and a few fresh blueberries.
Sprinkle the dry cake mix evenly over the top of the fruit.
Thinly slice butter and place it on top of the cake mix. I used a potato peeler to get thin slices of butter. The butter should completely cover the dry cake mix.
Sprinkle a few additional blueberries on top before baking.
Please the ramekins on a cookie sheet and bake for 45 minutes or until the cake is golden brown.
Remove from oven and let rest for 5 minutes. Serve with a scoop of vanilla ice cream on top.
Recipe Note
I only used 1/2 a bag of yellow cake mix for the individual portions. If you use a 9x13 pan you can fit the whole bag and you will use the 1 stick of butter.
*Optional: Add chopped walnuts or pecans to cake mix.
