Ingredients

¾ lb pitted dates, diced

1 cup water

⅓ cup brown sugar

1 teaspoon lemon juice OR ½ tsp. Almond extract

1 ½ cup rolled oats

1 ½ cups flour, sifted

1 cup brown sugar

¾ teaspoon baking soda
-
¼ teaspoon salt
-
¾ cup butter, softened

For the cookie crumble
Directions
Preheat oven to 350 degrees.
Date filling
Combine the dates, water and brown sugar to a small saucepan. Bring to a boil and cook for about 10 minutes until thickened. Turn off heat and add lemon juice or almond extract. Stir and set aside to cool slightly.
For the cookie crumble
Combine the rolled oats, flour, brown sugar, baking soda and salt in a large bowl. Cut softened butter into small cubes. Mix in butter until crumbly. I used my fingers to get the best texture.
Press half the mixture into a 9 inch square baking dish. Spread the date filling over the base, then spread the remaining half of the crumbs gently over the filling.
Bake for 20-25 minutes until slightly brown around the edges. Cool and cute into squares. Yields 12 squares.
