I find the dried coconut (copra) at the local Indian store and hand grate the coconut so I'm using the freshest, most fragrant coconut. This sweet treat is two bites of heaven. Lots of coconut, with the sweetness of the jaggery and dates.
In this photo, I dipped in chocolate and added gold leaf and chopped, roasted cashews.

Ingredients

1 1/2 grated copra (dried coconut), not dessicated

1/2 cup jaggery, powder or grated

4 dates, pitted

2 T. cashews, roasted lightly

1/4 teaspoon cardamom powder

2 T. coconut oil, melted
Directions
In your blender, grind the grated coconut until it resembles small pieces (not fine pieces).
Roast cashew nuts until lightly browned.
Add the jaggery, dates and cashews to the blender and pulse until you have a coarse mixture. Do not over mix. Add the cardamom powder and pulse just until mixed.
The mixture will seem very dry but the coconut oil will help keep the mixture together.
Remove the mixture from the blender and put it into a small bowl. Add the melted coconut oil and mix with your hands. Take a large cookie scoop and put a scoop of the mixture into your hand. Squeeze until the mixture forms a ball. It will hold if you press hard enough. Set aside.
