Ingredients

1 1/2 cups corn oil

2 cups sugar

3 eggs

2 cups flour

2 teaspoons cinnamon

2 teaspoons baking soda

2 teaspoons vanilla

1 teaspoon salt

2 cups shredded carrots
-
1/2 cup crushed pineapple

1 cup chopped walnuts, optional

1 stick butter, room temperature

8 oz. Cream cheese
-
4 cups powdered sugar

1 teaspoon vanilla
Frosting
Directions
Combine all ingredients in a large bowl. Mix until blended. Pour into a 9x13 cake pan or 2 - 8 inch round for a layered cake.
Bake at 350 degrees for 1 hour.
Cool cake and frost. Sprinkle with chopped nuts.
Frosting
Using a stand mixer, add all ingredients to the bowl and blend until smooth.
