Ingredients

2 cups of blueberries (1 pint)

2 Tablespoons sugar

5 egg yolks

½ cup sugar

1 ¾ cups whole milk

½ cup blueberry sauce (you will have extra sauce leftover for serving)

1 cup dark chocolate chips

2 teaspoons unflavored coconut oil

Directions
Blueberry Sauce
In a small saucepan combine the blueberries and sugar. Cook together for about 20 minutes or until the blueberries burst and the sauce is thick. This will yield approximately 1 cup of blueberry sauce.
Ice Cream
In a medium sized saucepan, whisk the egg yolks, sugar, milk and vanilla and whisk until smooth. Turn on the heat to medium. Stir frequently. When the mixture comes to a simmer, continue stirring constantly until the mixture thickens and coats the back of the spoon or reaches 180 degrees on a digital thermometer. Note: If you cook this mixture too long, your mixture will curdle. Only cook until it thickens. It will not be too thick.
Remove the pan from the heat and stir in ½ cup of the blueberry sauce. Let cool to room temperature.
Using your ice cream machine, churn according to directions.
Chocolate Swirl
While your ice cream is churning, in a microwave safe bowl add your chocolate chips and coconut oil and microwave for 60 seconds. Stir and microwave if needed for the mixture to melt. Set aside until your ice cream is ready.
Final Steps
Spoon half the ice cream into a freezer safe, airtight container. Drizzle the chocolate sauce over the ice cream and swirl quickly before chocolate hardens. Top with the other half of the ice cream and top with chocolate sauce. Swirl lightly. Cover with a lid and place in the freezer for at least 8 hours.
Serve with extra blueberry sauce drizzled over the top and some whipped cream.
