Ingredients

2 cups graham cracker crumbs

¼ cup granulated sugar

6 T. (¾ stick) butter, melted

2 ¼ lbs (4 ½ blocks cream cheese)

1 2/3 cups sugar

5 eggs, room temperature

1 cup Bailey’s Original Irish Cream

1 T. Vanilla extract
-
1 cup mini semi sweet chocolate chips

1 cup chilled heavy whipping cream
-
2 T. Powdered sugar
-
1 teaspoon instant coffee cream
-
1 teaspoon vanilla instant pudding (to stabilize)

Graham Cracker Crust
Preheat oven to 325 degrees. In a large bowl, mix crumbs and sugar. Stir in melted butter. Press mixture into a 9 inch spring form pan. Bake in oven for 7 minutes or until light brown.
Sprinkle ½ the chocolate chips into the warm crust.
Filling
Using an electric mixer, beat cream cheese until smooth. Gradually add granulated sugar and mix to combine. Add eggs one at a time. Blend in Bailey’s and vanilla.
Pour cream cheese mixture into baked crust. Sprinkle remaining chocolate chips on top of batter.
Bake cake until puffed, springy in the center and golden brown about 1 hour. Turn off oven and leave cheesecake in the oven for another ½ hour.
Cool completely - overnight. Release mold and remove cheesecake.
Coffee cream
Beat cream, powdered sugar, instant coffee and vanilla pudding until peaks form. Spread mixture over cooled cake.
Garnish cheesecake with chocolate curls.
