It's hard to find time to make dinner after working all day BUT this recipe will help you put a hot meal on the table that the family will devour. Serve it with a nice side dish; rice, noodles, mashed potatoes. Check out my green beans with garlic and lemon juice.
Quick Chicken Florentine (Chicken with Spinach)

Ingredients

2 T. olive oil

4 boneless, skinless chicken breast or chicken thighs

1/3 cup flour

2 T. butter

2 shallots, chopped finely

4 garlic cloves, minced

1 cup chicken broth or dry white wine

1 cup half and half
-
4 cups spinach
-
2 T. fresh parsley, chopped

1/2 lemon, cut into 4 slices for serving

Directions
Heat olive oil in a large skillet on medium heat. Sprinkle salt and pepper on chicken breasts and dredge in flour. Add chicken to the skillet and cook for 5-6 minutes per side until golden. Remove from pan and set aside.
Add butter to the pan and then add shallots and garlic. Cook until softened, approximately 2 minutes. Add the chicken broth/wine and cook for 5 minutes until it is reduced by half.
Add the half and half and cook for 5 minutes until the mixture is slightly thickened. Remove from heat and add spinach and 1/2 teaspoon of salt. Stir until spinach is wilted.
Slice chicken that was set aside into diagonal pieces and then add the chicken back to the pan. Turn on low heat and simmer for 5 minutes until chicken is cooked through.
Sprinkle with fresh parsley and serve. Use lemon slices to squeeze juice on each portion.
Recipe Note
If you like mushrooms, add 1 cup of sliced mushrooms in with the shallots and garlic and cook in butter to soften.
