Chicken lettuce wraps can be served as an appetizer or light meal. Seasoned ground chicken is cooked with onions, garlic, ginger and a sauce made from soy sauce, hoisin sauce and sesame oil. The cooked mixture is served in crisp lettuce leaves, usually iceberg or butter lettuce and garnished with chopped peanuts, cilantro and green onions. You will love the combination of savory flavors and crunchy texture, while also being low in carbs and high in protein, making them a favorite among those seeking a healthier option.
Add oil to a pan on medium heat and add ground chicken. Cook until some chicken is browned and add the onion and bell pepper (if using). Cook for 5 minutes.
For the sauce, add all the ingredients into a small bowl and whisk to combine. Pour the sauce over the cooked chicken and simmer for 5 minutes until the sauce thickens.
Turn off heat and add the water chestnuts and green onion. Stir to combine.
Serve in lettuce leaves, sprinkled with chopped peanuts, chopped cilantro and additional chili paste (if you like spice).
