When the garden starts bursting with zucchini, what better way to use it up then for this dish. You can also use tomatoes and bell peppers and skewer alternatively with the chicken and zucchini.
These kabobs can be made as an appetizer or served as a meal. To make this a meal; serve with Rice Pilaf, Tzatziki and a Greek Salad.

Ingredients

3 T. Lemon juice

1 1/2 teaspoons chopped fresh oregano (or dried oregano)

2 T. Olive oil

1/2 teaspoon salt

6 cloves garlic, minced

1 lb. Skinless, boneless chicken breast, cut into 1-inch cubes

1 large zucchini, cut into cubes and drizzled with olive oil, s&p

Cherry tomatoes, optional

1 green bell pepper, cut into cubes, optional

Directions
Chicken
Mix first five ingredients together and stir to combine. Add cubed chicken and marinade for at least 30 minutes and up to 4 hours. The longer you marinate, the better the chicken will taste.
Skewers
Remove chicken from marinade. Thread the chicken and zucchini and other vegetables alternatively onto skewers.
Heat grill to medium/high heat. Spray with cooking spray. Add skewers and cook for 8 minutes or until chicken is done; turning once.
Recipe Note
Serve this with Rice Pilaf and Tzatziki. Also served with a Greek Salad.
