Chicken Sausage and Hash Brown Casserole

You can split this recipe in half too. How big is the crowd? This recipe fits in a 9x13 sized pan. Get out the box grater for the onion, bell pepper and cheese. Make it easy.

Ingredients

2 T. Olive oil

1 pound chicken sausage/turkey sausage or diced ham

½ onion, grated

1 bell pepper, grated (you choose the color)

1 20 oz bag shredded hash browns (Simply Potatoes)

8 oz. Cheddar cheese, grated

3 T. Chives, chopped

6 eggs
-
½ cup milk
-
½ teaspoon salt
-
¼ teaspoon pepper
Directions
Preheat oven to 375 degrees
Grate onion, bell pepper and cheese and set aside.
Heat oil in a medium sized skillet. Add sausage and cook until browned. Remove from pan and set aside.
To the pan add the onion and bell pepper and cook until onion is slightly browned.
In the bowl with the cooked sausage, add the cooked vegetables.
In a separate bowl add the eggs and whisk with the milk. Add salt and pepper and mix until combined. Pour this over the sausage veggie mix and gently fold to combine. Add half the shredded cheese and mix.
Grease a 9x13 pan and pour in the mixture. Sprinkle the remaining cheese on the top and cover with foil.
Bake for 35 minutes, then remove the foil and cook for another 10 minutes, until bubbly and cheese starts to brown.
Serve hot or cold.
