Apricot and White Chocolate Scones

Ingredients

2 cups all-purpose flour

1/3 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon salt

1/4 cup unsalted butter, chilled and cubed

3/4 cup whipping cream

1 large egg
-
1/2 teaspoon vanilla extract

1/2 bag white chocolate chips or cinnamon chips

1 cup dried apricots, chopped
Directions
Preheat oven to 375 degrees
In a medium bowl or a food processor, mix flour, sugar, baking powder and salt. Cut in butter with a pastry cutter, or use the food processor and pulse, until you have course crumbles.
In a small bowl, mix together cream, egg and vanilla. Add this mixture to the flour mix and knead until combined.
Once your mixture is combined, add chopped apricots and white chocolate chips and mix until combined.
Roll out mixture and cut into triangles, circles, cut into squares. Make whatever shape you feel like.
Bake on ungreased cookie sheet (lined with parchment paper) for 10-15 minutes until lightly browned on top.

I brushed the top of mine with cream and sprinkled with coarse sugar before baking in the oven.
