Amanda's Avocado Toast

Ingredients

2 - Thick slices of sourdough bread or bagel

2 avocados, smashed

1/2 teaspoon garlic powder

1 large tomato, chopped

1/2 red onion, minced
-
1/2 jalapeno, chopped and remove seeds

3 T. cilantro chopped

1 lime, juiced
-
2 cobs corn, kernels removed and grilled

Elote Seasoning (from Trader Joes) or Everything Seasoning or lemon pepper

Cotija cheese, crumbled
-
red chili flakes

Salt as needed
Directions
Toast sourdough bread.
Smash avocado and add a dash of salt and garlic powder. Add a pinch of red chili flakes and mix together.
Chop red onion, jalapeno, cilantro and mix with lime juice. Set this aside. You will add the chopped tomato when you are ready to assemble, but Amanda swears its better if the onion and lime juice marinade. Add salt to pico to taste.
Add 1 Tablespoon of olive oil in pan on low heat. Cut corn off cob and roast on the stove until you see brown spots on the corn.
Assemble toast. Spread avocado on toast, add the tomato to the onion/jalapeno/lime juice mixture and top avocado with pico. Add grilled corn. Sprinkle cotija cheese. Sprinkle Elote seasoning. Top with a light sprinkle of dried red chili flakes.
Cut in half and share OR just eat the whole toast yourself !
Recipe Note
If you can't find Elote seasoning, you can use your favorite seasoning - everything but bagel or lemon pepper.
You can use frozen corn, if you can't find fresh corn.
