Banana Bread w/chocolate chunks and coconut

You will not forgive yourself if you wait too long before you try this recipe. It will be your go-to banana bread, like it is in my house. Serve with salted butter to put a smile on your face.

Ingredients

2 cups very ripe mashed bananas (approximately 5 ripe bananas)

4 eggs

2/3 cup canola oil

2 cups bread flour or all purpose flour

1 3/4 cups granulated sugar

1 (3.5 oz) box instant vanilla pudding

1 teaspoon baking soda

1 1/2 teaspoons salt

1 cup unsweetened shredded coconut

1/2 cup chocolate chunks
Directions
Preheat oven to 325°
In a large bowl, combine the mashed bananas, eggs and oil.
In a separate bowl mix dry ingredients; flour, sugar, pudding, baking soda and salt.
Add the dry ingredients into the wet ingredients and mix well to combine. Fold in coconut and chocolate chunks.
Grease and flour; 1 Bundt pan, 4 small bread pans, 2 regular bread pans. Pour the batter in the prepared pan.
Bake until the cake springs back when lightly pressed or a toothpick inserted into the center comes out clean. Bake 55-60 minutes. If using smaller bread pans, check at 45-50 minutes.
Remove from oven and cool slightly in pans, about 20 minutes. Turn pan upside down onto a clean plate to release cake. Let it cool and cut into slices. Rewarm with salted butter for a special treat.
