Banana Granola with coconut, cinnamon, nutmeg and walnuts

I love homemade granola and this one is no exception. The texture of this granola is so hearty. If granola can be hearty :) My only choice for oats are Bob's Red Mill thick cut oats. Please don't buy grocery store granola when it is this easy to make at home and you know what you put in it!
Ingredients

1/2 cup of banana, mashed (about 1-2 bananas)

1/4 cup dark brown sugar (Im sure light brown would work too)

1/4 cup coconut oil

2 teaspoons lemon juice

1 teaspoon vanilla

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/2 teaspoon kosher salt

2 cups rolled oats (Bob's Red Mill are great)

1/2 cup shredded, unsweetened coconut (*optional)

1/4 cup chopped walnuts
Directions
Preheat oven to 325° and line baking sheet with parchment paper
Add the smashed banana, coconut oil and brown sugar to a small saucepan. Stir to combine. Cover and cook until mixture bubbles. Cook another minute, swirling the pan so the mixture does not burn.
Remove pan from heat and add lemon juice, vanilla, cinnamon, nutmeg and salt. Fold in oats, coconut and walnuts until oats are completely coated.
Spread the mixture on the prepared baking sheet. Bake for 25 minutes, rotate tray and stir granola. Bake another 20-25 minutes until the oats are nicely browned.
Remove from oven and let granola cool. Once completely cooled, break into pieces and store in an airtight container. Can be stored up to one month or you can keep it in the freezer for up to 3 months.
