Roasted Tarragon Chicken w/Brandy

This is the best roasted chicken that you will ever eat! It is the moistest, tastiest, lip smacking good chicken.

Ingredients

1 - 4 lb whole chicken (Jidori if you can find it)

2 tsp. Kosher salt (I used 2 tsp for a 4lb chicken), add more if needed

6 T. Unsalted butter, softened

1 T. dried tarragon or use ¼ cup fresh tarragon, finely chopped

2 T. Brandy

Ground pepper
Directions
Remove chicken from packaging and pat dry with a paper towel. Sprinkle salt on the outside and the inside of the chicken. Set aside, uncovered, in the fridge for 1 hour or longer.
Preheat oven to 400 degrees
In a small bowl combine the softened butter, tarragon and 1 T. Brandy. Loosen the skin of the chicken and rub this mixture under the skin of the chicken and on the inside. Use any remaining butter to coat the outside of the chicken.
Place chicken breast side up on a lined baking sheet. I use a cookie sheet. Bake for 1 hour or until chicken breast reaches 165 degrees.
Remove chicken from oven and turn the oven off. Pour 1 T. Brandy into the juice in the bottom of the pan. Stir to mix and then spoon the sauce over the chicken. Put the chicken back in the oven for 10 minutes to rest.
Slice and serve the most delicious chicken you will ever eat! Serve with a side salad and roasted broccoli or your favorite vegetable.
Recipe Note
If you are lucky enough to have fresh bread, dip the bread in the sauce and enjoy!
